Enjoy the flavorful combination of pastrami tri-tip, mushrooms, basil, and mozzarella cheese in a homemade calzone!

Instructions

    In a large mixing bowl, combine the all-purpose flour, instant yeast, sugar, and salt.

    • 2 teaspoons instant yeast
    • 1 teaspoon salt
    • 1 teaspoon sugar

    Gradually add warm water and olive oil to the dry ingredients. Mix until the dough comes together

    • 1 cup warm water

    Transfer the dough onto a floured surface and knead for about 5-7 minutes until smooth and elastic. Add more flour if the dough is too sticky.

    Place the dough in a greased bowl, cover with a clean kitchen towel, and let it rise in a warm place for about 1-2 hours, or until it doubles in size.

    Preheat your pizza oven insert to 575°F (245°C).

    Punch down the risen dough and divide it into individual portions. Roll out each portion into a circle or oval shape, about 8-10 inches in diameter

    On one half of each rolled-out dough, layer the pastrami tri-tip, sliced mushrooms, torn basil leaves, and shredded mozzarella cheese.

    Season with salt and pepper to taste.

    Fold the other half of the dough over the filling to create a half-moon shape. Press the edges together firmly to seal the calzones

    Place the assembled calzones onto a baking sheet or a pizza peel if using a pizza oven insert

    Transfer the calzones onto the hot pizza stone in the oven.

    Bake the calzones for about 12-15 minutes, or until the crust is golden brown and the filling is heated through

    Remove the calzone and let it cool slightly before serving.

    Slice the calzones in half and serve them warm as a delicious and filling meal.
