    Preheat your Masterbuilt Gravity XT, or similar, to 400°F and allow it to fully come to temperature before adding the cracker bites.

    Place a slice of brie on each club cracker, sized to fit without hanging over the edges. Wrap each cracker with a half slice of bacon, tucking or draping the ends underneath the cracker to hold everything together during the cook.

    Set the wrapped crackers on a wire rack with the bacon ends facing down. Season lightly with your favorite BBQ seasoning over the tops. The rack keeps the crackers elevated so the rendered bacon fat drips away cleanly.

    Place the rack in the smoker and cook at 400°F for 20–25 minutes until the bacon has turned a deep amber color and the fat is fully rendered and crispy.

    Brush hot honey generously over the top of each cracker bite. Return the rack to the smoker and cook for an additional 10 minutes to let the honey caramelize and form a sticky glaze over the bacon.

    Remove the cracker bites from the smoker and allow them to rest for 10–15 minutes. This rest is important — it gives the crackers time to firm back up and the brie a moment to cool slightly so everything holds together when picked up. Serve warm.
