Optional – brush both sides of steak with butter for a better sear.
Season steak with salt, garlic powder, and black pepper.
Let sit at room temperature for 30 to 45 minutes.
Turn on and set grill temperature to 225˚F. Throw in hickory wood chunk for additional smoke flavor.
Smoke at 225˚F for about 30-40 minutes or until internal temperature has reached 110˚F.
Pull off and let rest for 20 minutes.
Turn temperature up to 600-700˚F.
Sear steaks for 1.5-2 mins per side (or until your desired internal temperature).
