Rotisserie Lemon Pepper Brined Chicken

Rotisserie lemon pepper brined whole chicken in less than an hour

Instructions

    To hold legs and wings together while on rotisserie, tie together, then place in zip lock bag. Add seasoning and half gallon cold water to bag.

    Ingredients

    • 1 whole chicken
    • 1/2 gallon of cold water
    • 1 cup lemon pepper seasoning

    Place bag in aluminum pan and put in refrigerator for minimum of 1 to 2 days, 3 days is optimal.

    • 9” x 13” aluminum pan

    Remove chicken from bag, do not rinse, and save excess seasoning from the brine.

  6. 04

    Place chicken in pan and pour brine over top and rub in the extra seasoning.

    Place brined chicken on rotisserie spit rod and secure both ends.

  8. 06

    Rotisserie for 75 to 90 minutes until internal temp of breast reaches 155˚F, spritz chicken with apple juice every 15 minutes.

    Remove spit rod with chicken from grill and let rest until the breast reaches 165˚F.

    Remove from spit rod, carve, and serve.
