In a large bowl, combine the sliced chicken pieces with the minced garlic, oregano, salt, black pepper, olive oil, lemon zest and lemon juice. Mix until all aromatics are well distributed.

Cover and let marinate in the fridge 2 hours to overnight. If short on time, 30 minutes will be fine! But the longer it sits, the more tender the chicken and better flavors.

Preheat your Masterbuilt Gravity Series Charcoal Grill to 425F.

Layer the chicken onto wooden skewers. Place the skewers directly on the grill racks. Cook for 5-6 minutes, then carefully pat with a kitchen brush or drizzle with olive oil.

Flip the kebabs to cook an additional 5-6 minutes, or until fully cooked and internal temperatures reach 165F. The chicken should be slightly golden-brown on the outside, as well.
