If you love burgers and banh mi, this recipe is for you! Bringing both flavors together in one recipe and cooked on a grill makes for a great pairing of flavors.
A traditional Vietnamese banh mi sandwich is one of Masterbuilt ambassador, Will Rouamvongsor's favorite sandwiches. Being able to use the Gravity Series 600 Digital Charcoal Grill and Smoker to combine this sandwich (known for its bread) with another favorite handheld… the burger, made for a great fusion inspiration. The smokiness and char on the burger patty added with the traditional toppings of a banh mi (i.e. pickled carrot & daikon (“do chua”), fresh cilantro & jalapeños, banh mi butter spread) made for a perfect pairing. To Will, the sweet soy glaze brought this burger together and is truly a recipe that is United by Flavor!

Meat - in a large mixing bowl, mix and combine your ground beef, ground pork, lemongrass, shallots, and seasoning.

Mold into 4 ounce patties.

Pickled Daikon & Carrot (Do Chua) - add and mix in a tablespoon of salt on your cut daikon and carrots, leaving for 15 minutes to draw out the moisture. Rinse.

In a sauce pot, heat up your water, sugar, and vinegar.

Once cooled, pour into your carrots and daikon and store in a mason jar.

Mayo/Spread - in a blender, add your egg yolks, salt, white pepper and turn on the blender on low. Drizzle in your aromatic infused oil until it becomes a thick mayo.

Heat up your grill to 400°

Place seasoned meat onto grill, with a rotation of flipping and leaving under a closed lid to obtain the smoky flavor

As the burgers are close to being done (around 160°), apply your glaze to each size and let cook for an addition 1-2 minutes on each side.
