Pickle Party Ribs

Ingredients

  • Main

These Party Pickle Ribs bring together tangy pickle brine, sweet BBQ sauce, and a fresh punch of dill for the ultimate crowd-pleasing bite. Brined overnight and smoked low and slow on the Masterbuilt Gravity Series® 1150 Digital Charcoal Grill and Smoker, these riblets soak up bold flavor while staying tender and juicy. Whether you're hosting game day, a backyard cookout, or looking for a fun twist on classic smoked ribs, this recipe delivers big flavor with simple steps.

Instructions

    Brine the Ribs

  1. 01

Slice baby back ribs between each bone to create individual riblets. Submerge them fully in straight pickle juice and refrigerate overnight.

  2. Season

  3. 02

Pat dry. Use jalapeño hot sauce as the binder, then coat generously with your favorite BBQ rub.

  4. Smoke

  5. 03

Place the riblets on the smoker at 250°F for about 2 hours, or until they develop a deep, mahogany color.

  6. Build the Braise

  7. 04

Transfer ribs to a foil pan and add butter, brown sugar, additional rub, BBQ sauce, hot honey, and a splash of pickle juice.

  8. Cook Covered, Then Uncovered

  9. 05

Cover tightly with foil and cook for 1 hour. Remove the foil and cook another 30 minutes to allow the sauce to thicken and tack up.

  10. Finish

  11. 06

Toss or brush with more BBQ sauce, then garnish with fresh dill and diced pickles before serving.
