Slice baby back ribs between each bone to create individual riblets. Submerge them fully in straight pickle juice and refrigerate overnight.

Pat dry. Use jalapeño hot sauce as the binder, then coat generously with your favorite BBQ rub.

Place the riblets on the smoker at 250°F for about 2 hours, or until they develop a deep, mahogany color.
