Instructions

  1. 01

Trim all visible fat from the beef eye of round. Freeze for 30–60 minutes to make slicing easier. Slice against the grain into ¼-inch thick strips.

  2. 02

In a large bowl or resealable bag, combine: Dr Pepper, soy sauce, Worcestershire, brown sugar, pepper, and garlic powder.

  3. 03

Add sliced beef and ensure all pieces are coated. Refrigerate for 12–24 hours, flipping occasionally for even flavor.

  4. 04

Remove beef from marinade and pat dry with paper towels.

  5. 05

Preheat the Gravity Series® 1050 to 165–175°F. Use cherry, apple, or hickory wood for a mellow smoke.

  6. 06

Arrange strips directly on smoker grates or jerky racks. Smoke for 3–4 hours, until jerky is firm, dark, and bends without breaking.

  7. 07

Let the jerky cool completely. Store in an airtight container in the fridge for up to 2 weeks, or freeze for longer shelf life.
