This Coffee Marinated Tri-Tip is a simple way to add bold, rich flavor to your next cook. The marinade combines coffee with savory ingredients to help tenderize the meat while building a deep, balanced flavor. Cooked low and slow, then finished with a high-heat sear on the Masterbuilt Gravity Series®.

Instructions

    Marinate

    In a bowl, combine all marinade ingredients and mix well.

    Gently press out as much air as possible before sealing the bag to ensure the meat stays fully in contact with the marinade.

    Refrigerate for 4–6 hours or overnight to allow the tri-tip to absorb all the flavors. For best results, turn the bag occasionally so the marinade evenly coats the meat.

    Place the tri-tip in a large freezer bag and pour the marinade over the meat, making sure it’s evenly coated.

  6. Prep for Cooking

    Remove the tri-tip from the marinade and discard any remaining liquid.

    Pat the meat dry with paper towels to help achieve a better sear.

    Season both sides evenly with kosher salt and freshly cracked black pepper, adding granulated garlic if desired for extra flavor.

  10. Smoke the Tri-Tip

    Preheat your Masterbuilt Gravity Series® grill to 160–225°F for low and slow cooking.

    Place the tri-tip on the middle rack, positioning it for even airflow and consistent smoke.

    Cook for about 1 hour, or until the internal temperature reaches 105–110°F, preparing it for the next step.

  14. Sear, Rest & Slice

    Remove the tri-tip from the grill and let it rest briefly while increasing the heat of your Masterbuilt Gravity Series® grill to 600–700°F.

    Once hot, place the tri-tip on the bottom grate and sear for about 2 minutes per side, rotating halfway through each side to create a nice crust.

    Continue cooking until the internal temperature reaches 123–125°F for medium-rare.

    Remove from the grill and let rest for 5–7 minutes, then slice against the grain and serve.
