Generously rub your beef ribs or oxtail with dry rub of choice. Let sit for half an hour to an hour.

Place on smoker on main rack (middle rack also works great, I just like to use main grates) at 225 degrees. Smoke for 4 hours (internal temp should be around 165 by then) .

Place onion slices on the bottom of an aluminum pan, add the beef from the rack on top, and place half a stick of butter in the pan.

Pour can of beer into the pan. (If it's a large pan two cans definitely won't hurt it). Cover with foil and set temp to 250. Smoke for another 2 hours.

Open the foil and check temp with a probe. Should be probe tender and temp close to 195-200 degrees internal temp. Remove from smoker and rest in pan for 15-20 minutes.
