First, make your Nashville hot seasoning by combining all the ingredients into a seasoning shaker.

Next, cut your chuck roast into equal sized cubes and season well with your Nashville Hot Seasoning.

Fire up your Gravity Series Grill and Smoker to 250F and smoke for 2 hours. After the 2 hours, add a cast iron pan to your grill and add your butter, melt it down, then stir in the rest of your Nashville hot seasoning.

Add your beef to your pan and coat well in your sauce then add your honey. Cover with foil and smoke at 300F for an hour, then smoke for 1 more hour uncovered.
