Grilled oysters are already next-level, but when you add a smoky char from the coals and top them with a sweet-heat mango habanero glaze, you're entering flavor territory that hits every note—smoky, salty, spicy, and sweet. This dish is a breeze on the Gravity Series® 800 Digital Charcoal Griddle + Grill + Smoker, which lets you lock in your temp and focus on flavor. It’s an impressive yet approachable recipe that delivers complex flavor with simple steps.

Instructions

    Preheat Masterbuilt Gravity Series 800 to 400°F.

    In a small saucepan, add the mango habanero ingredients and bring to a simmer over medium heat. Stir occasionally.

    Once the mango is soft, use an immersion blender to puree everything together.

    Continue to simmer for another 5-10 minutes until the desired consistency.

    Remove from heat and let cool.

    Add cilantro lime butter ingredients to a small saucepan, melt together, making sure the butter doesn’t brown.

    Shuck the oysters, leaving them on the half-shell, and add a spoonful of the melted cilantro lime butter.

    Grill for about 5-7 minutes or until the oyster meat begins to curl and is cooked through.
