Mix garlic powder, salt, pepper, and onion powder into the ground beef. Place ground beef mixture into gallon-sized resealable plastic bag and spread evenly; set aside.
Make a bacon weave.
Cut the Ziploc bag down the center and sides, then fold the bag away.
Layer the pizza sauce, shredded cheeses, mushrooms and pickles down the center of the ground beef "blanket".
Fold the beef blanket on both sides toward the center and seal completely. Seal the ends and make sure there are no holes or gaps.
Place the beef roll into the center of the bacon weave. Pull both sides of the bacon blanket to the center and seal the beef roll inside. Seal the ends and make sure there are no holes or gaps.
Place the fatty into your smoker and cook for 2 hours at 225°F. Slice and serve!
