Preheat smoker to 225°F.
In a medium bowl, combine cherry preserves, butter, lemon zest, lemon juice, cinnamon, salt and ground cloves.
- 1 cup Cherry Preserves
- 1 tablespoon Butter or Margarine (melted)
- 1/2 teaspoon Lemon Zest
- 2 tablespoons Fresh Lemon Juice
- 1 1/2 teaspoon Ground Cinnamon
- 1 pinch Salt
- 1 pinch Ground Cloves
Brush marinade over chicken, reserving some marinade for basting during the cooking process.
Place chicken in smoker and smoke for 1 1/2 hours, basting halfway through, or until internal temperature reaches 165°F.
