Smoked BBQ Meatloaf Minis are simple enough for weekdays or weeknights
Set Gravity Series Grill + Smoker to 275˚F and add wood chunks.
While your grill heats up, prepare your peppers, onions, and garlic by sautéing them over medium heat with olive oil until soft.
- 2 cups onion, finely chopped
- 2 cups green pepper, finely chopped
- 2 teaspoons minced garlic
Place peppers, onions, and garlic in large mixing bowl. Add beef, sausage, BBQ sauce, breadcrumbs, eggs, salt, pepper, and cayenne pepper.
- 2 pounds lean ground beef
- 1 pound Italian sausage
- 1 cup BBQ Sauce
- 1 cup fresh breadcrumbs
- 2 eggs, lightly beaten
- 1 teaspoon kosher salt
- 1 teaspoon black pepper
- 1/2 teaspoon cayenne pepper
Mix ingredients together. Once combined evenly, form mixture into 4 small meatloaf logs.
Add aluminum pan to cooking grates with wire rack on top. This will allow your meat to receive the most smoke. Add meatloaf logs to top of wire rack.
- 9” x 13” Aluminum pan
- Wire Cooking Rack
Smoke for 2 hours until internal temperature reaches 160˚F. Lightly brush the top of each meatloaf with BBQ sauce every 30 minutes while smoking.
For best flavor, allow meatloaf to rest at least 15 minutes before serving. Enjoy!
