This rib rack is cooked low and slow on the Gravity Series® Digital Charcoal Grill and Smoker, coated in a smoky-sweet honey chipotle glaze, and finished with a bright citrus kick. Perfectly balancing sweet heat, rich smoke, and tangy flavors.

Remove the membrane from the back of the ribs and pat them dry. This helps the rub and glaze stick better.

Generously coat both sides of each rib rack with the Cajun honey rub. Let them sit for 15–30 minutes to absorb the flavors.

Set your Gravity Series® Digital Charcoal Grill and Smoker to 225–250°F for low-and-slow cooking.

In a small bowl, combine the honey, minced chipotle peppers, adobo sauce, and lime juice.

Place the ribs on the grill or smoker, bone side down. Smoke for 3–4 hours, maintaining the temperature around 225–250°F.

Brush the honey-chipotle glaze onto the ribs during the last 30 minutes of cooking, repeating every 10 minutes for a sticky, flavorful finish.

Remove the ribs and let them rest for 10 minutes before slicing between the bones. Serve warm and enjoy!
