Smoke your way to flavor-packed chicken skewers with this easy ginger-lime recipe using the Gravity Series® Digital Charcoal Grill and Smoker. Juicy chicken breast tenders are marinated in a savory mix of garlic, ginger, soy sauce, rice wine vinegar, sesame oil, and fish sauce, then smoked to perfection over natural lump charcoal for a rich, smoky taste. Finished with a sweet and tangy ginger-lime sauce, these skewers are ideal for backyard gatherings, weeknight dinners, or anytime you want bold, smoky flavor

Soak the bamboo skewers in water for at least 30 minutes to prevent burning while smoking.

In a mixing bowl, grate the garlic and ginger. Add soy sauce, rice wine vinegar, sesame oil, and fish sauce. Stir until combined.

Add the chicken breast tenders to the marinade, tossing to coat thoroughly. Let the chicken sit for at least 15–20 minutes (or up to 1 hour for deeper flavor).

Remove the bamboo skewers from water and thread the chicken tenders onto them, leaving a little space between pieces for even cooking.

Set your Gravity Series® Digital Charcoal Grill and Smoker to 345°F.

Place the chicken skewers in the smoker and cook until lightly golden and starting to firm up, about 15–20 minutes.

In a small pan, combine grated ginger, brown sugar, soy sauce, and lime juice. Place the pan on the smoker or stove and stir occasionally until the sauce simmers and sugar dissolves.

Pour the simmering sauce over the chicken skewers, ensuring they are fully coated. Continue cooking in the smoker until chicken reaches an internal temperature of 165°F and is cooked through.
