Instructions

    Trim and season the brisket with my homemade Texas SPG rub the night before for an overnight dry brine.

    Smoke the brisket by adding 1-2 6" wood splits into the mini hopper every 30 minutes or as needed until the bark is set.

    Rest the brisket until the internal temp drops down to 140F (~1-2hrs) and then its ready to slice and serve.
