Filipino BBQ Pork Steak

par Rommel Manio

Bring a taste of the Philippines to your backyard cookout with this bold, sweet, and smoky Filipino BBQ Pork Steak.

This Filipino-style pork steak recipe is packed with nostalgic flavor and summertime memories. Using a banana ketchup-based marinade and basting sauce, this BBQ dish balances sweet, savory, and umami-rich notes with a slight tang from lemon-lime soda. Grilling it low and slow on the Gravity Series® 1150 infuses each bite with rich, smoky flavor—and trust us, it’s not complete without a side of white rice.

“The baste is our version of BBQ sauce—and it always needs to be eaten with a side of rice.”

Why the Gravity Series® 1150 is Perfect for This Recipe

The Masterbuilt Gravity Series® 1150 Digital Charcoal Grill + Smoker makes this traditional Filipino BBQ process easy and efficient. Its consistent temperature control helps slowly render and tenderize the pork before you crank up the heat for a final sear. The result? Juicy, smoky, caramelized pork with real charcoal flavor—just like it’s cooked back home.

Ingredients

  • Basting Sauce

  • Pork and Marinade

Instructions

  1. 01

In a large bowl, combine banana ketchup, lemon-lime soda, oyster sauce, soy sauce, brown sugar, garlic, and pepper. Mix well and submerge pork steaks in the marinade. Cover and marinate in the fridge for at least 4 hours, preferably overnight.

  2. 02

Preheat your Gravity Series® 1150 grill to 300°F.

  3. 03

Remove the pork from the marinade and place it directly on the grill. Make sure both sides are well coated with the marinade.

  4. 04

Flip the pork steaks once they reach an internal temperature of 150°F. Remove and individually wrap each steak in foil with a few pieces of unsalted butter.

  5. 05

Return the foil-wrapped pork steaks to the grill and continue cooking for about 30 minutes, or until internal temp reaches 180°F.

  6. 06

Remove the foil, increase grill temperature to 350°F, and return pork steaks to the grates.

  7. 07

Brush the basting sauce on both sides and sear for 2–3 minutes per side until you achieve a caramelized char.

  8. 08

Let rest for 15 minutes before serving with a warm side of rice.

MASTER IT.
