The Grill Makes a Difference

The Gravity Series® 1150 Digital Charcoal Grill and Smoker is ideal for this Smoky and Spicy Truffle Chicken Pasta recipe because it combines low-and-slow smoking capabilities with high-heat searing power—all in one grill.

You can start your chicken low at 250°F to infuse deep, smoky flavor, then crank up the heat to sear mode using the 1150’s powerful cast iron grates. This dual-zone capability is crucial for getting juicy chicken with a golden-brown crust—perfect for topping creamy pasta.

Plus, the digital controls and gravity-fed charcoal hopper make temperature management effortless, so you can focus on flavor, not fire. Whether you're smoking, searing, or multitasking like a chef, the 1150 delivers consistent results with minimal babysitting—just what you need for a layered dish like this one.

Instructions

  1. 01

Preheat your Masterbuilt Gravity Series® 1150 to 250°F using your favorite lump charcoal.

  2. 02

Coat sliced chicken with olive oil and Finesse seasoning.

  3. 03

Smoke the chicken until it reaches an internal temperature of 135°F, then transfer to the griddle or direct heat zone and sear until it reaches 165°F internal temp for juicy, charred edges. Set aside.

  4. 04

In a skillet, heat butter and olive oil over medium heat. Add minced garlic and sauté until fragrant (about 1–2 minutes).

  5. 05

Pour in heavy cream and let it reduce slightly, stirring occasionally.

  6. 06

Add in the Parmesan cheese, Black Truffle Hot Sauce, and Garlic Blend. Stir well until creamy and thickened.

  7. 07

Boil pappardelle pasta in salted water until al dente. Reserve 1/4 cup of pasta water, then drain.

  8. 08

Toss the pasta with the creamy truffle Alfredo sauce. Add reserved pasta water as needed for consistency.

  9. 09

Top with sliced smoked chicken, extra Parmesan, and fresh basil.
