Fill your Masterbuilt Gravity hopper with charcoal and preheat to 250°F (121°C).

Pat chicken thighs dry, rub with olive oil, and season all over with salt, pepper, smoked paprika, garlic powder, onion powder, and cayenne.

Place thighs skin side up on the grates, close the lid, and smoke for 3–4 hours, until internal temp reaches 175–185°F. Spritz with apple juice or broth hourly if desired.

Rest 20–30 minutes under foil. Remove skin and bones, then shred the meat. Chill at least 1 hour.

In a bowl, whisk mayonnaise, Dijon, lemon juice, Worcestershire, salt, and pepper.
