Instructions

    Preheat Your Gravity Series® 1050

  1. 01

Set your Gravity Series 1050 Digital Charcoal Grill + Smoker to 250°F using a mild wood like cherry or pecan for a balanced smoke flavor. Allow your grill to stabilize before adding the meat.

  2. Prep and Season the Ribs

  3. 02

Trim any loose pieces or excess fat from the ribs.

  4. 03

Remove the silver skin membrane from the bone side for better smoke penetration.

  5. 04

Slice the rack into individual ribs between each bone.

  6. 05

Apply hot sauce as a binder, then coat generously with Cajun honey BBQ seasoning.

  7. 06

Let the ribs sit for 15–20 minutes to absorb the rub.

  8. Smoke the Ribs

  9. 07

Place the ribs directly on the smoker grates.

  10. 08

Close the lid and smoke for 90 minutes, or until the internal temp reaches 165–170°F.

  11. Braise for Tenderness

  12. 09

Transfer the ribs to an aluminum pan.

  13. 10

Place butter over the top and pour apple juice into the bottom of the pan.

  14. 11

Cover tightly with foil and return to the smoker for 1 hour.

  15. Firm Up the Bark

  16. 12

Carefully remove the ribs from the pan and place them back on the grates for 15–20 minutes to firm up the bark.

  17. 13

Use this time to prepare the glaze.

  18. Make the Cajun Honey BBQ Sauce

  19. 14

In a saucepan over medium-low heat, combine butter, honey, corn syrup, ketchup, seasoning, and vinegar.

  20. 15

Stir until smooth, bring to a quick boil, then reduce to a simmer.

  21. 16

Cook for 5–7 minutes, then stir in hot sauce. Adjust consistency with a splash of beer if desired.

  22. Glaze and Rest

  23. 17

Brush the ribs with warm Cajun Honey BBQ Sauce during the last 10 minutes of cooking.

  24. 18

Remove from the grill and let rest for 10–15 minutes before serving.
