Instructions

    Preheat the Gravity Series 1150 to 600°F with griddle insert or cast-iron skillet inside for direct high-heat cooking.

    Pat very dry with paper towels. Season with salt and pepper.

    Add olive oil to griddle/skillet. Place the scallops down and sear without moving for 1.5–2 minutes until a deep golden crust forms. Flip and sear another 1–2 minutes until just cooked through.

    In a small saucepan, melt butter, add garlic, lemon zest, and juice. Stir in parsley.
