Why Use a Combo Smoker Grill for Salmon?

The Gravity Series® 1150 Grill and Smoker is ideal for this maple bourbon smoked salmon recipe because it delivers precise temperature control and steady low-and-slow heat, which is essential for gently smoking delicate fish without drying it out. Its ability to hold 225°F consistently means the salmon cooks evenly and absorbs a clean, steady stream of smoke flavor. Plus, the spacious cooking area gives you plenty of room to use a foil tray or fish grate without crowding, and the built-in fan system ensures optimal airflow for a beautifully smoked finish. A sticky maple bourbon glaze locks in flavor while the Gravity Series holds a consistent low-and-slow heat, ensuring perfectly tender results every time.

Using a charcoal grill for smoking salmon brings out the rich, deep flavor that electric or pellet grills simply can’t match. Want to learn more? Check out our blog post for the difference between charcoal grilling vs pellet

Whether you're serving it for a summer dinner party or your next holiday gathering, this smoked salmon is as simple as it is show-stopping.

Simple but impressive, this smoked salmon recipe delivers a balance of salty richness, smoky depth, and a sweet bourbon-maple glaze. Using the Gravity Series® 1150 Digital Charcoal Grill and Smoker, you can maintain steady, low heat for tender, perfectly cooked fish every time.

Instructions

  1. 01

Preheat the Gravity Series® 1150 Digital Charcoal Grill and Smoker to 225°F. Add cherry or apple wood chunks for sweet, fruity smoke.

  2. 02

Prep the salmon: Pat the salmon dry with paper towels. Mix and sprinkle salt, brown sugar, and pepper evenly over the fillet. Let rest at room temperature while the smoker comes to temp.

  3.

  4. 03

Place the salmon skin-side down on a fish grate or foil. Place in the smoker and cook for 45 minutes.

  5. 04

In a saucepan over medium heat, combine maple syrup, bourbon, Dijon mustard, soy sauce, and red pepper flakes. Simmer 5–7 minutes until thickened.

  6. 05

After 45 minutes of smoking, begin basting the salmon with glaze every 10 minutes. Continue cooking until internal temperature reaches 140°F (about 1–1.5 hours total, depending on thickness).

  7. 06

Let the salmon rest for 5 minutes before slicing.
