Cómo un chico del sur de Indiana convirtió su pasión en un legado de la barbacoa

Crecí en una pequeña granja en medio de la nada, en el sur de Indiana. Criábamos un montón de animales diferentes, cultivábamos casi todo lo que comíamos en nuestro gran huerto y salíamos a cazar y a pescar para complementar lo que guardábamos cada año tras nuestro día anual de matanza.

Así fue como me inicié en la cocina y en las barbacoas. Mi lista de tareas no era «limpia tu habitación». Era más bien algo así como: 1. Ve a pescar unos peces y haz que te los limpien para que estén listos para la cena de esta noche; 2. Desentierra unas patatas y límpialas para este fin de semana; 3. Dale de comer y de beber a los terneros de engorde del granero de arriba, etc.

Era una forma de vida increíble. Ya por aquel entonces, decir que seguías el concepto «de la granja a la mesa» era algo que molaba. Eso afianzó profundamente en mí el amor y el respeto que siento por la comida y por su origen.

Fuera de la granja, los deportes y el atletismo eran, y siguen siendo, una parte muy importante de mi vida. Al ser de un pueblo tan pequeño y tener bastante talento para ciertos deportes, la competición era mi forma de vida. Cuando un defecto cardíaco que solo ocurre una vez entre un millón me obligó a dejar el campo y la pista para acabar en un quirófano de corazón abierto, me quedé bastante destrozado.

Después de pasar unos años sin rumbo fijo, sin poder recurrir a mi pasión por el deporte, volví al mundo de la competición en un concurso local de barbacoa en un jardín, sin carácter oficial. Fue ahí donde todo despegó: empezamos a ganar, MUCHO, y me volvió a entrar el gusanillo de la competición.

Al final me puse en contacto con Masterbuilt y llevo usando la Gravity Series y un montón de otros productos sin parar desde que salió al mercado el primer modelo 560 (por cierto, todavía uso ese mismo). En los últimos 12 años más o menos, la barbacoa me ha llevado a sitios que antes ni siquiera me hubiera imaginado. Puedo viajar por todo el país, salir en la radio, en podcasts y en la tele con regularidad para dar a conocer la marca, y mis productos se venden en miles de tiendas y también por internet.

Desde entonces, la barbacoa se ha convertido en una parte fundamental de mi día a día, tanto como negocio como afición y fuente de ingresos. Me encanta enseñar el arte de la barbacoa a cualquiera que quiera aprender y estoy encantado de contar con un socio tan genial como Masterbuilt.

What inspired you to start barbecuing, and how did you get started?
Full Boar BBQ started with a group of friends from a small town in Indiana. Growing up, we loved attending the Heimatfest Backyard BBQ competition in Ferdinand, where $3 got you unlimited BBQ samples. One summer after college, we were shocked to see only three teams competing - it was clear the tradition was fading. Out of hometown pride, we formed our own team, practiced hard, and helped revive the event. Winning first place in chicken and second in pulled pork that year sealed the deal - we were hooked, and Full Boar BBQ was born.
How long have you been barbecuing?
We’ve been barbecuing for over a decade now, ever since we started competing in the Heimatfest. It’s been an incredible journey from a small-town tradition to creating our own sauces and seasonings and competing all over.
What advice would you give to someone new to grilling?
Don’t be intimidated by all the fancy recipes and videos you see. Everyone starts somewhere, and those BBQ pros have more failures than viral successes. Start slow and simple, dive in headfirst, and soon you’ll be adding your own twists to classic recipes. Just be warned - you’ll end up being the go-to cook for every event!
Do you have advice for new content creators in the BBQ space?
Stay consistent, be authentic, and focus on what you enjoy cooking. Don’t worry about perfection - share your passion and let your personality shine through.
What is your favorite grilling technique and why?
I love the reverse sear method. It’s the perfect way to break down insoluble fatty tissues for tenderness while keeping the natural fats locked in for juiciness. It also adds a unique textural layer to the meat that’s always a hit.
What’s your favorite recipe to make on the grill?
My jalapeño honey beef ribs and Italian beef hot dogs are favorites. Both combine smoky flavors with a simple braising method to create an explosion of flavor that’s unforgettable
