Ingredients

    Instructions

    1. 01

In a large bowl, mix Greek yogurt, lemon juice, garlic, ginger, oil, salt, turmeric, cumin, garam masala, and paprika. Add chicken wings and toss until evenly coated. Marinate for at least 30 minutes (overnight is even better for deeper flavor).

    2. 02

Preheat your Masterbuilt Gravity Series to 400°F. Add a chunk of fruitwood for extra smoke flavor (optional but encouraged).

    3. 03

Place wings directly on the grill and cook for 20–25 minutes, flipping every 5 minutes. Cook until golden brown and crispy, and the internal temperature reaches at least 175°F.

    4. 04

While the wings are cooking, heat butter and oil in a skillet. Sauté onions until soft, then add garlic and ginger. Stir in spices (garam masala, paprika, cayenne, cumin), followed by crushed tomatoes, sugar, and salt. Simmer for 10 minutes. Add coconut milk and fenugreek leaves (if using). Finish with an extra tablespoon of butter and blend until smooth.

    5. 05

Reduce grill heat to 275°F. Toss the grilled wings in the butter chicken sauce, then place them back on the grill for another 7–10 minutes to set the sauce and infuse more smoke.

    6. 06

Combine yogurt, cucumber, lemon juice, garlic, herbs, spices, and buttermilk in a bowl. Chill until ready to serve.
