    Score the membrane on the back side of the ribs (no need to remove it entirely).

    Flip the rack meat-side down and slice between each bone to create individual rib sections—perfect for “party rib” style.

    Lightly coat each rib with olive oil and apply a generous amount of beef rub on all sides.

    Place the ribs directly on the smoker grates.

    Let them smoke for 2 hours, spritzing with water at the 45-minute mark, and then every 30 minutes after that.
