Preheat the Gravity Series grill to 350°F. Pat the chicken thighs dry, then rub lightly with olive oil. Season each piece with salt and poultry rub, making sure each thigh is evenly coated.

Place the seasoned chicken thighs on the preheated grill. Cook until the internal temperature reaches 165°F, flipping as needed. For extra flavor and color, sear briefly over direct heat before removing from the grill.

Transfer the cooked chicken to a cutting board or bowl and shred using two forks or tongs until you have bite-sized pieces. Set aside.

Slice jalapeños in half. Char half of the jalapeños on the grill until blistered, then dice both the charred and raw halves. This gives a combination of smoky and fresh heat.

In a mixing bowl, combine the shredded chicken, diced jalapeños, whipped cream cheese, and hot sauce. Stir until creamy and fully combined. Adjust seasoning or hot sauce to taste.
