Soy, Whiskey & Butter Basted Filet

Why Whiskey Works in Meat Marinades

Whiskey adds more than just a boozy punch—it brings a bold depth of flavor that enhances grilled meats. Its natural sweetness pairs beautifully with the saltiness of soy and the richness of butter, creating a well-balanced marinade that tenderizes the meat while layering in complex notes of caramel, smoke, and spice. The alcohol also helps carry these flavors deeper into the filet, making each bite rich, juicy, and flavorful.

The Benefits of High-Heat Searing

Searing over high heat isn’t just for show—it’s the key to locking in juices and creating that crave-worthy crust. The Maillard reaction that occurs at high temperatures caramelizes the surface of the meat, delivering deep flavor and a satisfying texture. With the Gravity Series dialed up to 600°F, you’ll get an even, golden-brown sear that contrasts beautifully with the tender, juicy interior. This quick-cook method is ideal for thick, high-quality cuts like filet, maximizing flavor without overcooking.

Ingredients

  • Main

A smoky, buttery filet infused with deep umami and subtle whiskey sweetness—perfect for quick weeknight grilling or a special backyard dinner.

Instructions

  1. 01

In a bowl, whisk together the soy sauce, whiskey, and melted butter until well combined.

  2. 02

Place the filet in a zip-top bag or shallow dish. Pour the marinade over the steak, ensuring it's well coated. Refrigerate for 30 to 60 minutes, flipping once halfway through.

  3. 03

Set your Gravity Series® 1150 Digital Charcoal Grill and Smoker to 600°F for direct high-heat grilling. Let the grates get hot enough to sear.

  4.

  5. 04

Remove the filet from the marinade and let the excess drip off. Place directly on the hot grill grates. Grill for about 4–5 minutes per side for medium-rare, or until internal temp reaches your desired doneness (130–135°F for medium-rare). Avoid flipping more than once to build a nice crust.

  6.

  7. 05

Remove from the grill and let rest for 5 minutes. Slice and serve with a drizzle of any remaining melted butter or your favorite charred vegetable side.
