Instructions

  1. 01

Preheat your Masterbuilt Gravity XT, or similar, to 275°F using a mild wood like apple, cherry, or pecan. These woods complement the sweetness of the honey and the heat of the Cajun seasoning without overpowering the shrimp.

  2. 02

Pat the shrimp dry with paper towels — dry shrimp takes on seasoning better and cooks more evenly. Place them in a bowl and season with the Cajun honey rub, garlic powder, and paprika if using. Toss gently until every shrimp is evenly coated.

  3. 03

Place a 10–12 inch cast iron skillet in the smoker and add the butter. Allow it to melt fully, about 5 minutes. Stir the honey into the melted butter until fully combined.

  4. 04

Add the seasoned shrimp to the skillet in a single even layer. Smoke uncovered at 275°F for 20–25 minutes, stirring once halfway through, until the shrimp are opaque and have reached an internal temperature of 135–140°F.

  5. 05

Remove the skillet from the smoker and allow the shrimp to rest for 2–3 minutes. Finish with a squeeze of fresh lemon juice and a scatter of chopped parsley if desired. Serve directly from the skillet.
