    Preheat your Masterbuilt Gravity Series® 1150 to 300°F. This will give your steak the perfect environment to finish cooking low and slow after searing.

    Remove the NY strip steak from the fridge and season it liberally with salt, pepper, garlic powder, and onion powder (or preferred seasoning). Let it rest at room temperature for 20–30 minutes to absorb flavor.

    While your grill heats up, set your oven to 425°F (or follow the package instructions). Spread the waffle fries on a baking sheet, season with salt, pepper, and garlic powder, and bake for about 20 minutes.

    In a cast iron skillet over high heat, melt butter or ghee and sear the steak for 1 minute per side until a crust forms. Transfer the steak to the Gravity Series® 1150 and smoke until it reaches 125°F internal temperature. Remove and let rest for 10 minutes before slicing.

    Using the same skillet, add sliced onions and a bit of oil if needed. Cook over low heat with salt, pepper, garlic powder, and onion powder. Once soft, add balsamic vinegar and simmer for 5 minutes to absorb the flavor.

    At the 20-minute mark, remove the fries from the oven and sprinkle with cheddar cheese and diced jalapeños. Return to the oven for 5 more minutes until melted.
