Mastering the Grill: Q&A with Israel Wofford

What inspired you to start barbecuing? How long have you been doing it? Tell us how you got started!
I was interested in learning how to create my own central Texas style barbecue. That’s where my journey began around 2016 I began why just a cheap kettle in my backyard learning how to control air flow and get that clean smoke that you really want. In 2019 I began creating content and sharing on Instagram and it just grew from there eventually growing into a years long partnership with Masterbuilt!
What advice would you give to Someone new to grilling? do you have any advice for a new content creator in the BBQ space?
If you’re new to grilling a couple of the biggest things to manage are temperature control and food temperatures, when a piece of meat is done and not overcooking it. As a content creator you gotta stay true to yourself which isn’t always easy, create content that you enjoy! I have adapted some ideas from other creators that I like their content but overall I try and stay true to myself.
What is your favorite grilling technique that you've learned and why?
Hot n Fast barbecue for sure, good barbecue does not require 225F for 12 plus hours. I love running hot n fast, typically 275-300F is where I barbecue. You will get amazing results in a fraction of the time.
