Popcorn Shrimp
1 pound cleaned crawfish tails or shrimp
1 quart oil for deep-frying
1 teaspoon fresh thyme, chopped
1 teaspoon fresh basil, chopped
1 egg
1 cup water
1 cup milk
3 teaspoons your favorite hot sauce, divided
1 cup fry mix
salt and black pepper to taste
In a deep fryer, preheat oil to 400º F in electric fryer or 350º F in propane fryer.
Season crawfish or shrimp using thyme, basil, salt, black pepper, and 1 teaspoon of hot
sauce. In a bowl, prepare an eggwash by combining egg, milk, water, and 2 teaspoons of
hot sauce. Season eggwash to taste with salt and pepper. Place fry mix in a second bowl. Dip crawfish or shrimp in eggwash, then in fry mix. Deep fry until golden brown.
Serves 6 to 8.
