Apple-glazed Lamb Chops
Ingredients
3 tbsp apple jelly
1 green onion, thinly sliced
1 tbsp soy sauce
2 tsp lemon juice
1/8 tsp curry powder
Dash ground cinnamon
Dash ground red pepper
2 small red and/or green apples cut crosswise into ¼ inch slices
Lemon juice
8 lamb loin chops, cut 1 inch thick (about 2 lbs)
1 tbsp snipped fresh mint
Directions
For glaze, in a small saucepan cook and stir apple jelly, green onion, soy sauce, lemon juice, curry powder, cinnamon, and red pepper over medium heat until bubbly, remove from heat. Remove seeds from apple slices, brush apple slices with lemon juice. Trim fat from chops. Grill over medium heat to desired doneness, turning and brushing once with glaze halfway through grilling. Allow 12-14 min for medium rare, and 15-17 minutes for medium. Place apple slices on grill rack next to chops the last five minutes of grilling, turning and brushing once with glaze halfway through grilling. Serve chops with grilled apples, and sprinkle with mint.
