Important Facts About Smokers
- Maximum temperature setting is 275°F (135°C).
- Wood chip loader and wood chip holder MUST be on place when using smoker.This minimizes the chance of wood flare ups.
- Wood chips must be used in order to produce smoke and create the smoke flavor.
- This is a smoker. There will be a lot of smoke produced when using wood chips. Smoke will escape through seams and turn the inside of smoker black. This is normal.
- Check grease tray often during cooking. Empty grease tray when full. Grease tray may need to be emptied periodically during cooking.
- Do not open smoker door unless necessary. Opening smoker door causes heat to escape and may cause wood to flare up. Closing the door will re-stabilize the temperature and stop flare up.
- Do not leave old wood ashes in the wood tray. Once ashes are cold empty tray. Tray should be cleaned out prior to and after each use to prevent ash buildup.
How to Clean a Smoker
- For cooking racks, water bowl and drip tray use a mild dish detergent. Rinse and dry thoroughly.
- For wood chip holder and wood chip loader, clean frequently to remove ash build up, residue and dust.
- For the interior and exterior of smoker simply wipe down with a damp cloth. Do not use a cleaning agent. Male sure to dry thoroughly.
- Door seal and inside seam that seal attaches to MUST be cleaned after each use to keep seal in proper working condition.

- Why won’t my turkey fryer turn on?
The Control Panel features a “Safety Switch” that must be aligned properly for unit to power on. Green light will illuminate when control panel is mounted correctly.
- How much oil do I need to use?
Fryer will require approximately 3 gallons (11.4L) of oil. The fill line is the maximum amount of liquid that can safely be used in this unit. Filing to the line provides more than enough water or oil to prepare any dish in this unit.
- What type of oil should I use?
Crisco Peanut Oil is recommended because of the great taste, 0 Trans fat and higher smoke point but any common cooking oil may be used.
- How hot will the oil become?
Oil will reach 400°F (204°C) in approximately 55 minutes. Oil temperature will decrease to 275°-280°F (135-138°C) when turkey is placed in fryer, which is an appropriate turkey frying temperature.
- Should I keep the lid on during use?
Yes, the lid helps retain heat and keeps splatter inside unit.
- What size turkey can I deep fry in this unit?
You can deep fry up to a 14lb (6.35kgs) turkey in this unit.
- Can an extension cord be used with this unit?
No, extension cords will lose electric current resulting in increased cooking time and decreased performance. Extension cords can also pose a trip hazard.
- Does the turkey go into the basket breast side up or down?
Turkey and turkey breast should be placed horizontal in basket, breast side up.
- I followed the formula and the turkey did not fully cook. What went wrong?
Cooking conditions may vary. Turkey could have been cold. Bring turkey to room temperature before frying. Sometimes a cold or frozen spot in a joint or deep in the turkey breast does not allow that section to cook properly.
- Can the Electric Turkey Fryer be used outdoors?
Outdoor use is not recommended for Masterbuilt’s Electric Turkey Fryer. If you do not want to use the unit in your house please use in a garage or covered patio to prevent Electric Turkey Fryer from being exposed to rain showers.
How to Clean and Electic Turkey Fryer
- Masterbuilt recommends cleaning unit prior to use.
- Clean lid, inner pot and basket with a damp cloth or sponge using mild detergent. Rinse and dry thoroughly. These parts may also be cleaned in dish washer.
- Clean outer shell, cord, control panel and element with a damp cloth or sponge using a mild detergent. Dry thoroughly. NEVER put these parts in a dishwasher.
- WARNING: Do not place control panel under running water. Immersing control panel and cord can cause electrocution.

- How do I care for my cast iron cooking grates?
When using cast iron grates proper seasoning is important. Grates must be washed thoroughly with mild detergent, rinsed with hot water and then dried completely with a soft cloth or paper towel. NEVER ALLOW TO AIR DRY OR WASH IN A DISHWASHER. Seasoning will prevent rust and food from sticking. Season by applying a thin coating of solid vegetable shortening over the entire surface, including all corners. Place cooking grates in grill and allow to heat for 1 to ½ hours. Grates are now ready to use. Frequent re-seasoning prevents rusting.
- My grates have rust on them. How do I get rid of it?
If rust occurs, clean with a steel brush. Re-apply vegetable shortening and heat as indicated above.
- The paint finish inside my lid is peeling. What can I do?
You are seeing a deposit of grease and smoke that collects during normal use that resembles paint. These carbon deposits are no-toxic, but you may want to regularly remove the build-up. Remove buildup using a brass or stiff bristle brush before grilling. Future build-up can be avoided by simply wiping the grill while slightly warm with a mild soap and water solution.
- When can I put my meat on the grill?
Grill is ready for use when charcoal is ashed over and no visible flames are present.
- How do I regulate the heat on my grill?
Adjusting the dampers will increase and decrease airflow and heating.

- When the cast iron burner burns yellow or not at all what do I do?
If your burner does not burn, blows out, burns yellow or there’s a flame inside the ventura, you need to check the burner ventura for any obstructions. Dirt dobers, spiders and other insects will build a nest inside the burner ventura blocking air and gas flow.
How to Clean Gas Cookers
- Remove the hose from the burner using a 7/16” wrench
- Insert a small rod in the hole that the hose was removed from.
- Hold the burner up to a light looking into the hole that the hose was removed from to see any obstructions.
- If burner has not cleared flush with water.
- Once the burner has been cleared, reassemble the burner (air shutter, spring, and hose.)
