    Fill fryer halfway with oil and heat to 350°F.

    Remove skin from salmon and chop in a food processor or with a knife; do not overprocess. In a large bowl, combine salmon, onion, eggs, Cajun seasoning, cracked peppercorns and Greek dressing.

    • 2 pounds Fresh Salmon
    • 3/4 cup Yellow Onion (chopped)
    • 2 Eggs (well beaten)
    • 2 teaspoons Cajun Seasoning
    • 1/8 teaspoon Cracked Black Peppercorns
    • 1/3 cup Ken's Steakhouse Greek Dressing

    Using a 1/3 cup measure for each patty, shape mixture into 6 patties and roll each in crushed crackers.

    Place in fryer, turning once, and fry for 2 1/2 to 3 minutes or until patties are golden brown and float to the top. Use a metal slotted spoon to transfer to paper towels to drain. Serve with your favorite sauce.
